So what if...

The best macaroni casserole I ever made was a Kraft mix. I added ground beef, and it was AWESOME!

I haven't been able to stick 100% to my running schedule because of vacation. I am hoping this week is better.

I found a couple fleas on Shanny. I promptly removed them, gave her a flea bath, and applied her flea meds. Problem solved!

I really love the semi-fallish weather we are having in STL. There's little humidity, and I love driving with the windows down!

My birthday is in a week and a half, and I have no plans other than running a 5K that morning. I'm just not as excited about it this year as I have been in the past. Usually, I have plans made months in advance. I blame it on turning 25...halfway to 30.

What are you saying "so what" to?

(Two) Weekend Recap

I have gone on two mini vacations the past two weekends. And, I must say both trips were really awesome!

Trip 1

The weekend before last, I went to the Lake of the Ozarks with my Dad, his wife, my sister, brother-in-law, and my niece and nephew. I got some sun, relaxation, and tons of snuggle time with my babies! The only thing missing was my Kyra J.

I got in a 2.6 mile run with my brother-in-law. It was hilly and hot, and I struggled, but I did it!


Great food and wine.

Trip 2

This past weekend, I went to Nashville with girlfriends to celebrate my college roommate's bachelorette party. It was SO MUCH FUN, and I honestly haven't laughed so hard in a long time. We had a such a blast!

And a few photo highlights from Nashvegas...


We kicked off the weekend with a strip-tease/pole dance class at Studio Goddess. And, let me tell you, it was hard, but so much fun. Our teacher was sweet as can be and really talented. Her background is in gymnastics, not exotic dancing, so she focused more on the athleticism involved. Highly recommend it!

Saturday, we had dinner at M Restaurant and Bar. The food was AMAZING! 


Last, but absolutely not least, the bride-to-be and I. I am so happy that I was able to be a part of the celebration, and I am so happy that she's marrying her best friend and soulmate!

Needless to say, I am whooped. The past couple weekends have been a whirlwind, but so fun to say the least. This week and the upcoming weeks, I will be focusing on getting back into a routine and spending time with my love.

Finish The Sentence Part 5

If I had one extra hour in the day...I would sleep. Always sleep. 

I wish my name...would always stay the same. I love my name...Tori Thompson, it just rolls off the tongue. Although, when I was little, I really wanted my name to be McKenzie.

I think anything chevron is...cute! It may be on its way out, trend-wise, but I still like it. I'm not obsessed with it, but I don't hate it either.

My last nightmare...involved me losing teeth. I have that dream a lot actually that I have loose teeth or that I have lost teeth. It freaks me out! I always wake up and make sure that they are all still there.

Sometimes...I wish I was a housewife. I could get so much done! Work on growing Jane Not So Plain, maybe start my own business, actually finish getting the apartment together, etc.

My last meal on Earth would be...Filet, loaded baked potato, bread and oil from Macaroni Grill, and brownies.

I would much rather do it myself than have someone else do it. Hence the reason why our apartment is still not completely put together. I love Kyra and trust him with my life, but I know I would not be satisfied if I left it up to him. Control freak? Why, yes I am.

Mayonnaise...is delicious. Not gonna lie, I ate mayo sandwiches when I was little. And, the best part of a Subway sandwich is the mayonnaisey tomato at the end.

10 years ago, I didn't think...that I would ever love the Harry Potter books as much as I do. It may sound weird, but those books helped me get through some rough times; it was my little escape.

Selfishly...I make Kyra let me use the big TV in the living room to do my workout DVDs even if he is watching something. We have 3 other TVs in the apartment, so he's fine :)

My favorite show on TV right now...is Here Comes Honey Boo Boo. The new season started last night, and it was ridiculous on all levels. It's so funny, gross, intriguing, all of the above. Yet, somehow they can be somewhat endearing. Call me crazy, but I like it!

And, George Zimmerman...needs to stop hogging the media. Honestly, I am tired of hearing about it. I'm ready for the Royal Baby!

Food Prep Attempt #1

Pretty Strong Medicine

Happy Weigh In Wednesday! I am at 140.8, so I am down about 1.5lbs since the first of the month. I wish it was more of a decrease, but it's a decrease nonetheless. Hopefully today's post will show that I am trying to be better with my nutrition and help to encourage me (and you too!) to continue on this path.

As I have mentioned before, I have been wanting to do batch cooking/weekly food prep for awhile now. And, I FINALLY made it happen! I grocery shopped on Sunday and was a cooking machine on Monday evening. Here's what I made:

Chicken Sausage with Veggies

Megan from 5280 Running Mommy gave me this idea, and I tried it the same day. I found spinach and feta chicken sausages from Whole Foods, so I made those and sauteed some red pepper and yellow squash to go with it. Kyra and I had it for dinner on Monday, and I took the leftovers for lunch the next day. So yummy!

Shredded Lime Chicken

I've made this before, and it turned out so good that I wanted to make it again. This time, I tripled the original recipe, so Kyra and I both can eat multiple servings of it. And, I usually just make the chicken part of the recipe and have it over brown rice with lettuce, tomato, and a little bit of cheese.

Antipasto Kabobs





I've seen these all over Pinterest, and they always look so delicious. I made mine with mozzarella, cherry tomatoes, pepperoni, and smoked mozzarella tortellini. They are DELICIOUS! And, the best part about them is that they are also so easy to make. All you have to do is boil the tortellini, then put the ingredients on the skewer.  Done and done!

Protein Pancakes


No judging...my pancake making skills are BAD, so they ended up being weirdly shaped.
I go through phases of wanting something sweet for breakfast and wanting something savory. The last couple weeks I have had homemade egg mcmuffins for breakfast, so it was time to switch to something sweet...enter protein pancakes!

Ingredients:

  • 1 cup oatmeal
  • 1 whole egg and 1 egg white
  • 1/2 cup sweet cream protein
  • 3/4 cup almond milk
Directions:

  • Mix together and let sit for 15 or so minutes to let the oats soften.
  • Make like traditional pancakes.
  • Let cool completely then freeze individual servings [2 smaller pancakes or 1 larger one] in ziploc bags.
Ideally, makes 8 pancakes, four 2-pancake servings. My pancake-making skills are not the best, so I sometimes end up with various sizes and have to use my best judgement for a serving size. Recipe adapted from this Facebook post.

Tropical Fruit Smoothie

In the summer time especially, I love smoothies. They're just yummy, but you have to be careful because they can pack a lot of sugar. If you make them yourself though, it's so much easier to control what goes in them. I made mine with 1/2 cup each frozen peaches, pineapple and mango, 1 cup coconut water, and 1 tbsp flax seed. I found the idea here, and the video/transcript provides a great explanation of the health benefits of each ingredient.

So far, I am so happy with how everything turned out. It's all been really yummy!

Pintester Movement 2.0



Guys! It's time for another round of pin testing for The Pintester Movement. This time, Sonja challenged us to test something that she has already tried. I perused through her Tested board on Pinterest, and I immediately chose to test a Brownie in a Mug. Who can turn down a brownie? Not this girl!

I'm not gonna lie, I tested the Mug Brownie three times, each with a variation of the ingredients. I have zero problems consuming brownies, so I was perfectly happy testing this three times :)

Test #1



I followed the directions pretty closely, except that I used whole wheat flour. It turned out ok, but it was grittier than a Sons of Anarchy episode. No bueno!



Over 400 calories for a snack/dessert? No thanks, not for my diet anyway!

Test #2




I swapped out the sugar and flour for sweet cream flavored protein powder, added 2 tbsp of PB2, and kept the rest of the ingredients the same.

Why did I do this you ask? Kassie from Southern Girl Gets Fit has been blowing up Instagram with delicious-looking mug cakes using protein, so I wanted to give it a go. As you can see below, the oil still packs in quite a few calories, and I knew I could make this into a lower calorie treat that still tasted just as good or better.



Test #3



Last try=the best try! Here's the recipe for my Protein Mug Brownie:
  • 2 scoops sweet cream protein
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp PB2
  • 2 tbsp unsweetened applesauce
  • 3 tbsp water
Microwave for the recommended 1min 40sec.



I'm not gonna lie, the third test was the most normal looking, aka it looked the least like baby poop of the three tries. Also, I think it tasted the best of the three AND has the lowest calories. Winner winner chicken dinner!

Work Out Wednesday

For today's Work Out Wednesday post, I am going to share some random things I have been doing lately health and fitness-wise.

1. I've started drinking Weight To Go! tea in the afternoons.




I usually hit an afternoon slump around 2:30-3:00pm, and I am really trying to stay away from soda. I only like coffee in the morning, so I was kind of stumped for awhile as to what I wanted to do for an afternoon pick-me-up. It dawned on me that I already have this on-the-go tea brewer and a couple variety of teas, so problem solved!

Like I have said a couple times, it's too hot in STL to drink hot beverages, so I brew my tea normally in my brewer, then pour it over ice. It's so yummy, and I know it is much better for me than soda!

2. I created a workout calendar.




So, last week, I was reading 24 to 30 and came across Samantha's post about training for a half marathon. In the post, she included a picture of a calendar with all of her workouts included for the month. So smart! She was also kind enough to share that she used Calendar Labs, so I hopped right over and made a workout calendar of my own.

On my calendar, I noted not only my workouts, but also special events that I need to take into consideration while planning my sweat sessions, like travel plans, birthdays, weddings, etc. On the days that I have 2 workouts planned, I totally feel like Miss Elle Noel!

3. I'm still scouring Pinterest for healthy recipes and meal prep tips.

This is the biggest challenge for me because I am weird about some healthy foods, like chicken and avocado for example. If chicken can't be cooked a certain way, I can't stomach it. And, avocados are only good to me in guacamole. There are other foods on the list, but you get the picture.

The other part of this challenge is that I don't have or want to spend a ton of time every day figuring out what I am going to eat. I know I need to do food prep on Sundays, but I haven't been able to get a handle on it yet. I'm determined to get it together though and figure it out!

Five on Friday


1. We've been dog-sitting Mia this week. She's an 8-month-old pitbull, and she is the sweetest girl. Kyra and I have had so much fun playing with Mia and snuggling both pups.



2. I am currently working on a Halloween pillow for work. It's weird to be using Halloween-themed fabrics, but it's so excited because my pillow instructions will be published in our annual project e-book.



3. My favorite girl turned 4 this past weekend. She's my inspiration and the coolest kid ever!



4. I helped my sister get ready for the birthday bash for our favorite 4-year-old. It was a fish theme, and I am so glad that I got to help bring Sarah's ideas to life. Everything turned out just how we wanted, and the party was a huge success!



5. I did my pin test for the upcoming Pintester Movement 2.0. Look for details at the end of next week!

Work Out Wednesday: DVD Review

In honor of Work Out Wednesday with Skinny Meg, I am going to review 2 work out DVDs I recently started using.

Jillian Michaels: Yoga Meltdown

Yoga Meltdown
Don't let the word "yoga" fool you! This is not your typical yoga workout; it is a more dynamic, power-type of yoga. Basically, JM takes basic yoga poses and incorporates repetitive movements turning them into interval training. If you haven't liked yoga in the past because it's too laid back, then this is the yoga DVD for you!

Overall, I liked the program and felt like I got in a good work out. I have been practicing yoga once or twice a week for the last few months, so I was familiar with the poses and not apprehensive at all with taking it up a notch. One of the reasons I enjoy yoga so much is that it calms me down, and it helps me focus on my well being. Yoga Meltdown didn't really calm me down, but it did give me a great workout! Though I would prefer a more traditional yoga practice when I want to re-center myself, I will definitely keep Yoga Meltdown in my workout DVD arsenal for future sweat sessions.

Jillian Michaels- 30 Day Shred


30 Day Shred
Well, we all know that Miss Jillian is no joke and that her methods work. Have you seen Biggest Loser? You know what I'm talking about.

I shared my pre-30 Day Shred stats here, and I am officially 2 work outs in. So far, I am really liking it! I love that its quick... three 6 minute circuits: 3 minutes strength, 2 minutes cardio, and 1 minute abs.  Did you do the math? That's 18 minutes of hard work. Anyone can do that, so there's really no excuse not to work out!

There are 3 levels in the 30 Day Shred, and my plan for now is to do each level for 10 days. If I am ready to bump up to the next level before the 10-day mark, then I will, but we'll cross that bridge when it gets here. I have been using 3lb weights, but I want to incorporate 5lb weights into some of the strength portions, especially the chest flys.

Overall, you'll be sweating your buns off, but its over before you know it. Some parts are more challenging than others, but that's how it is with all work out programs.

Pre-30 Day Shred

I don't think I mentioned it last week, but I am starting Jillian Michael's 30 Day Shred today as part of a challenge proposed by Miss Holly of Where We Can Live Like Jack & Sally and Amber of Crafty Healthy Mommy. Check out the challenge details here.

Ok, so I am gonna be honest here...I am nervous to share my pre-30 Day Shred stats and photo with you all. I am not concerned about sharing my measurements, but there's something more personal about the number that shows up on the scale.

Anyway, let's get to it before I chicken out!
