Homemade Burrito Bowl

Store the lettuce and cheese separate from the meat/beans to keep them from getting soggy!
I posted the above photo on Instagram yesterday, and now I have the meal details for you! My version of a homemade burrito bowl is filling, delicious, and packed with protein. It can also be easily adapted to your preferences and calorie needs. For example, swap out ground beef for ground turkey/chicken or shred romaine or spinach to use instead of Iceberg.

Here's what I used and how I made my Homemade Burrito Bowl:


Optional Ingredients:

  • Boil-in-a-Bag Brown Rice
  • Juice from Half of a Lime
  • 1/8 cup Cilantro, chopped
  • Dash of Salt


  • If you want rice with your burrito bowl, cook rice according to package instructions. Once the rice is done cooking, add lime juice, salt and chopped cilantro. I don't mind a stronger cilantro taste, so I used 1/8 cup. Feel free to add/reduce the amount of cilantro to taste. 
  • Brown ground beef in skillet, adding taco seasoning toward the end of cooking; mix well. Once the ground beef is fully cooked, cover the skillet and turn the burner down to low heat, allowing the meat to soak up the flavor of the seasoning.
  • Slice 5 cherry tomatoes in half lengthwise.

Burrito Bowl Assembly:
  • Optional: start with 1/2 cup rice
  • Top rice (if using) or start with 3 oz. ground beef
  • Add 1/4 cup beans, sliced tomatoes, and 1 cup of lettuce
  • Sprinkle with 1/8 cup shredded cheddar

This recipe will make about 4-5 burrito bowls. Kyra and I had this for dinner Wednesday, I ate this for lunch Thursday, and there's still some left over. And, we didn't measure out all of the ingredients for each bowl, so I am estimating the amount of servings.

Hello JNSPers! Sorry it's been so quiet around here lately. My life, both personal and professional, has been busier than normal, but I am back today with Thursday Thoughts!

-Huge shout out to Jennifer of Ramblings of a Suburban Mom for sending me some Spark samples! She sent Fruit Punch and Mango Strawberry, and I definitely preferred the Fruit Punch. I don't know, I am weird about fake strawberry flavors. The Fruit Punch tasted like Kool Aid, but it kinda made me nauseous after awhile. Has anyone else experienced this? I would love to ween off soda, and I think Spark would be a great alternative, but I don't wanna be nauseous all the time.

-Shanny Mae is no longer allowed outside without supervision. She rolled around in something gross yesterday afternoon. I don't know what it was, but it smelled bad and she had it all over her. Then, this morning, she did it again!

-Google Reader will be no more as of Monday, so get your heineys in gear and pick a new blog reader. I personally like Bloglovn', but I have heard good things about Feedly, too.

-I am still working on food prep, but I haven't been able to find enough time/energy to prep for an entire week. I have made batches of homemade egg mcmuffins, protein pancakes, and various and assorted other things. This time for the egg mcmuffins, I fried an egg for each one and used turkey sausage. I like them better this time around!

When it comes to summer fashion, I tend to keep it simple because it gets HOT in STL. Too much fuss and you'll be sweatin' like a whore in church...Nobody wants to see that!

  • Iced Coffee: Too hot in STL for hot coffee
  • Aviators: One of these days I will get a pair of Ray Bans, but for now, Forever21 will have to suffice
  • Jean Shorts: Or, jorts if you wanna call them that...I like the distressed boyfriend cut because they're super comfy and not too short
  • Sundresses: Flowy dresses made of lightweight fabric are definitely a summer staple...lets the air flow if you know what I mean
  • Self-Tanner: Now that I have a 9-5 type job I don't get a lot of pool time, so self-tanner is a must...I refuse to be pasty in the summer
  • Old Navy Flip Flops: $2.50/pair...nuf said

Wedding Day Link Up and Other News

Ok, so I'm not married or engaged, but I will be one day (hopefully anyway)! I honestly don't have that many things that I have my heart set on when the day comes. Weddings should embody the couple that is getting married, so big or small, lavish or simple, all weddings really are beautiful in their own way.

Anyway, I have mentioned a little bit about mine and Kyra's relationship, but I will share the basics really quickly...

  • We've been together a little over a year and a half.
  • He's 18 years older than I am and has 3 daughters {20, almost 18, and 13}.
  • Just take a minute to let that sink in...
  • But, he really is the love of my life. Unconventional? Probably. Does it work? Yes, for us anyway. He loves me the way I always hoped and dreamed someone would, and that's all that really matters in the end.

Now that you know the background, I will share the only detail that my heart is pretty much set on...the ring. I want something that is a little off traditional, like our relationship.

It's a champagne sapphire set in rose gold, and it's heavenly.  It looks like an engagement ring, but with a twist, just like Kyra and me. We act like a regular couple, but there's a bit of a twist with our age difference. 

If any of you are wondering, yes I plan on marrying Kyra (he knows this and feels the same), and yes I have shown him and my mother this ring. 

Other News

I think I am going to start running. I have already downloaded a Couch to Half Marathon app and MapMyRun to my phone. I'm nervous though! I have never been a consistent runner. I have had knee/hip pain when I have run before, so I'm apprehensive. If you have any advice, helpful info, apps, links, anything, PLEASE SHARE! Thank you SO MUCH in advance :)



Strong Medicine


It's time for another round of Weigh In Wednesday and Work Out Wednesday! This will be the first time that I am linking up with both parties at the same time, so woohoo! Today, I am going to share my health and fitness goals for the next week.

  1. Drink 100 oz. of water per day. Yes, I may use the bathroom every five minutes, but I can honestly say that I feel better when I drink this much water. And, when I go water-crazy on a regular basis, my skin is clearer. 
  2. Practice yoga everyday. I recently bought the Jillian Michaels: Yoga Meltdown and Yoga for Weight Loss DVDs, so I will definitely be trying these videos this week. Don't worry! I will give you my thoughts about each one after I have tried them :)
  3. Work on more food prep! I am still looking for recipes, techniques, etc. to try, but I am hoping to do a full week's worth of food prep on Sunday. Wish me luck!

Why did you start blogging?

I started blogging because I wanted a place to share my DIYs. I love creating and needed a place to showcase what I have done. JNSP started as a sewing and craft DIY blog, but it has turned into more of a lifestyle DIY blog. We all deserve to be the best versions of ourselves, and I hope that JNSP will help me and you, too, to work towards that goal.

Where do you find inspirations for your posts?

I find inspiration mostly from the people I love and the things that are going on in my life. I have been focusing a lot lately on health and wellness because I want to work on that area of my life. But, on the flip side, I like to post about the things I have made, decorated, or planned for my friends and family.

What is your favorite link-up to do each week?

Weigh In Wednesday, Finish This Sentence and 5 on Friday are my favorite link-ups as of right now. Since JNSP is in its infancy, I am always looking for more of these types of things to participate in to meet new blogging friends!

Beach, hands down!

If you had an all expenses paid vacation to anywhere, where would you go?

French Polynesia! I want to stay in one of those hut-type things that are on stilts over the ocean.

I would love to meet Ellen DeGeneres. She's hilarious and seems so nice! I bet we would have so much fun!

I don't have a favorite post yet. I feel like I am still finding my groove/niche, but I think I am getting there!

What is your favorite day of the week?

My favorite day of the week is probably Friday because that's when Kyra and I have a whole evening together. Our schedules are pretty much the exact opposite, so Friday and Sunday evenings are when we get to spend the most time together.

What is something you are passionate about?

I try not to get too political around here because I want JNSP to be a happy place, but I am really passionate about equal rights. I think love is love, and it's something we need more of in this world. I don't think our government should be able to decide who can marry who and what benefits people get.

Five on Friday

5. By the time Friday rolls around, I am exhausted! You'd think I'd want to celebrate the weekend, but most of the time, I am content with a Friday evening that consists of a bath and a glass of wine.


Weigh In Wednesday 6.5.13

Strong Medicine

I don't have a weight update today, but I do have a couple food ideas for you! I am the type of person that needs organization when it comes to eating. If I don't have a plan, then I am most likely to fall of the wagon. To combat this, I am attempting to do advanced meal prepping and stocking my pantry/fridge with healthy foods and snacks.

Here's what I did last night to get my booty in gear:

First, I picked 4 recipes that I wanted to make or have the ingredients for. It worked out to be that 2 of the recipes would work for either a snack or breakfast, then the other 2 recipes work for either lunch or dinner.

Next, I hit up the grocery store to pick up the ingredients for the above recipes. I also grabbed some Skinny Cow Cookies and Cream ice cream sandwiches, so I could have a semi-healthy dessert option when my sweet tooth hits.

After I got home from the grocery, I made and stored the Egg McMuffins and quinoa. I also prepped the ingredients for the Beef Ribs, so they would be ready to throw in the slow cooker right before I went to bed. They cooked through the night and smelled heavenly this morning. YUM!

The food I prepared will keep me fed for three solid days. This couple hours-worth of effort will save me time, calories and money over the next couple of days. I LOVE that I don't have to think about what I will be eating, and I know that I am putting good things into my body, too! WIN!
